Not sure how the Pentoo overlay works exactly, but I imagine as a Gentoo user, it'd be easier to use Pentoo rather than dual booting kali/Gentoo. I use Kali on a stick or in a VM for pentests because I like to be able to burn the image when I'm done, and Kali mostly works out of the box, with no need to configure.
